Recipe for this holiday

Take one group of people, add in your hosts and a generous helping of laughter. Mix with the breathtaking scenery of the Spanish Pyrenees and a few walks. Throw in a dollup of cookery classes and interesting places to visit, and leave for one week. Taste and we think you will be back for more.

Our Cooking and Walking Holidays Spain strike a balance between cooking, exploring our region, and walking in the spectacular Ordesa National Park. Our journey will take us from the high mountains to the foothills of the Pyrenees. Here we will discover the produce of the region, and with this in hand we will create some delicious dishes in our kitchen.
You will be staying at our renovated 17th century farmhouse, within the Pyrenees Geopark, a site recognised by UNESCO as of geological importance. We are Simon and Lucy your hosts, and the majority of the cookery classes will be held in our spacious guest house kitchen. Simon is a passionate cook and very creative, Lucy has a background in food science. Together they make a great team, always full of fun. The group size is limited to a maximum of 8 people.

“It is a very informal atmosphere where we encourage everyone to have a go, we have great fun cooking and believe if you enjoy your cooking it shows in your dishes.” Simon

"We find cooking together as a group is a great way to share experiences, and tips. Everyone learns something." Lucy

“I spent an absolutely fantastic week at Casa Allué on a Walking and Cooking holiday. Lucy and Simon are perfect hosts, sharing their love and knowledge of the area and how you can experience it, from walking to wildlife, food to photography.”

Cooking and Walking Holidays Spain Itinerary

The itinerary below gives an idea of what we will be doing during a typical week . We do make changes to the itinerary depending on the season, local markets, festivals and events eg. September departure coincides with the Feria of Ainsa - a combination of a food fair and agricultural show - not to be missed!

The decision of exactly where we go on a particular day will be decided by Simon and Lucy, and it will depend a great deal on the weather. See our Pyrenees Weather Forecast for a better idea of what to expect and what to pack (we send a recommended kit list when you book).

Each evening over coffee we talk about the day ahead.

Any changes to the itinerary will always be done to maximise the best use of time and to ensure you have a full and enjoyable holiday.

DAY 1 Cooking and Walking Holidays Spain: Saturday

• Arrival at Casa Allué, Albella. A welcome drink and a chance to meet Simon and Lucy, your hosts for the week, before our evening meal.

DAY 2 Cooking and Walking Holidays Spain: Sunday

• After a day of traveling you can catch your breath. We will get to know the area as we walk straight from the farmhouse. Following a brief tour of the village of Albella, we take a medieval pathway that links the local villages. We cross ancient seabeds, our destination is the village of Janovas. Here we discover the fascinating history of the village, one which had implications for the whole valley where we live!  Picnic lunch.
Time: 3-4 hours. Ascent:300m.
• Return to Albella for our first cooking workshop. This is a time for us all to get to know one another, as we all help to make a traditional Spanish main course and dessert.
• Evening meal, enjoying what we prepared. Briefing for the next day over coffee or an infusion.

DAY 3 Cooking and Walking Holidays Spain: Monday

• In the morning we visit a local cheese maker, where there is an opportunity to get hands on in the milking process. We then call to see an artisan producer of liquors and herbal infusions. There will also be a tasting!
• With aromas and tastes lingering, we head to the Ordesa National Park. We are going to the valley of Bujaruelo. This is a beautiful place, and an ideal location to have our picnic lunch. There is a short circular walk here that is not to be missed. It is an ornithological route crossing lush meadows, with open views to the peaks above us.
• In the afternoon we return to Albella for our second cookery workshop. We will learn some food preparation techniques as we prepare our evening meal together.
• Evening meal & briefing over coffee or an infusion.

DAY 4 Cooking and Walking Holidays Spain: Tuesday

• A very different day! We visit an area that supports the highest population in Europe of the magnificent Lammergeier (Bearded Vulture). In the morning we all walk to a number of viewing balconies. Here we hope to spot these birds, as well as Griffon vultures.
• Lunch at a mountain restaurant where we enjoy their home-grown produce and cooking. The restaurant is perched on the hillside, so you may just glimpse more raptors over lunch.
• In the afternoon we do a short circular walk to photograph an 11th century chapel, with a dramatic setting.
• On the way home we call at the medieval town of Ainsa.
• Return to Albella for our evening meal & briefing over coffee

DAY 5 Cooking and Walking Holidays Spain: Wednesday

• Today we are going to visit the Canyon of Añisclo. San Úrbez links this dramatic canyon to our own village. Cliff faces tower 1000m above us. The temperature difference between top to bottom means there is an incredible biodiversity here. The Río Bellos has left its mark on this limestone landscape. Here we have a choice of easy to moderate walks. Picnic lunch.
• Return to Albella for our third cookery workshop. We will use local ingredients to prepare our evening meal together.
• Evening meal & briefing over coffee or an infusion.

DAY 6 Cooking and Walking Holidays Spain: Thursday

• This is a full day. After breakfast we leave for Somontano our closest wine region in Aragon. The name Somontano means 'under the mountains.' An apt description, as the region sits in the foothills of the central Pyrenees mountains.
• This morning, en route, we will have the opportunity to walk up to a breathtaking viewpoint. The "jewel of Sobrabre," where we have our picnic lunch.
• Our tour continues as we visit one of the many bodegas in this region. As well as a tasting, we actually walk the vineyards, learning about the different grape varieties.
• We then call at a family run, ecological olive oil business. The production process is fascinating, and we learn how to appreciate a really good olive oil.
• On the way home we enjoy local tapas in Ainsa.

DAY 7 Cooking and Walking Holidays Spain: Friday

• After breakfast we have our final cookery class. We learn the art of a good tapas.
• Lunch in Albella.
• In the afternoon we depart for a 4x4 excursion to the Ordesa National Park. The trip will give a stunning overview to one of the true wonders of the world. We will go to five dramatic view points each giving a different perspective of the Canyon of Ordesa. There are panoramic views across to Monte Perdido, Brecha de Roland and the Massif. We will learn a little of the history of the valley, the wildlife and the flowers with our guide and driver.
• Return to Albella for a light supper.

DAY 8 Cooking and Walking Holidays Spain: Saturday

• A flexible timetable depending on departure times. A light lunch or a picnic is available.

Please note this is strictly a non-smoking holiday.
