Authentic Spanish cooking – with a twist!
The recipes we use on our Cooking Holiday are from authentic Spanish dishes. These we have gathered from neighbours, the chefs of our region and Spanish friends. There are also dishes of our own with a Spanish twist, like pechugas rellenas de queso de cabra, chicken breast stuffed with goat’s cheese, flame roasted red pepper and herbs!
We include primero (starters), segundo (main), postre (desserts) and of course tapas. We also share our tips, things we do every day when working in our catering kitchen.

Relaxed and great fun…
Just back from an amazing week cooking and walking in the Spanish Pyrenees at a beautifully restored rustic farmhouse. The hosts were fantastic and saw to our every need, delicious food and the group good fun. We learn’t and experienced so much from the cooking workshops.
My participation in the cooking classes was initially intended to please my more interested friends, but with a couple of glasses of wine and Simon and Lucy’s expert instruction, the cooking turned out to be great fun–and delicious.
The cooking part, led by Simon, was relaxed and great fun, and was supplemented by trips to local olive oil, goats cheese, infusion (tea and spirits) and wine producers.
The cookery classes are great fun and really hands on. Everything from picking vegetables from Simon’s organic roof top veg patch, to learning the art of chopping onions and garlic like a professional chef. The best bit is eating the delicious fruits of your labour, made even more enjoyable with some fantastic local wines.
